Ingredients:
The amount of each ingredient is determined by a number of factors, including: the size of the crockpot; availability and the chef’s taste. Where stated amounts are intended to be simply suggestions and offer some relative proportion. I add enough ingredients to fill a 7 litre crockpot.
- 1 k meat (beef or lamb) cut into bite-sized pieces
- Onion, chopped
- Celery, sliced
- mushrooms, sliced
- Carrots, sliced
- [frozen] peas
- [frozen] corn
- Potatoes, cut into bite-sized pieces
- Garlic, minced
- 150ml tin Tomato paste
- 1 Litre beef broth
- 150 ml Red wine
- Worcestershire sauce
- Parsley
- Oregano
- Salt, pepper
- thickener: equal amounts of flour & water (e.g., 150 ml)
Steps: Slow cooker
- Add ingredients to the crockpot in the following order: meat; onion; potato; carrots; celery; mushroom; peas; corn; garlic; tomato paste; parsley; oregano; Worcestershire sauce; salt; pepper; broth; red wine
- Cook for between 6-10 hours depending on heat (i.e., low or high)
- 30 minutes before serving, mix in thickener
- I like to serve the stew on a bed of egg noodles.
Steps: Instant Pot
- Open bottle of red wine
- Add all ingredients to Instant Pot
- Set cooker on high pressure for 30 minutes,
- Drink wine remaining in bottle
- Natural release for 10 minutes then quick release
- Thicken sauce with flour, if desired
