Ingredients:
- Prime Rib, at least 3-5 kilos (say at least 3 ribs), meat should be well marbled (i.e., lines of fat going through meat) and there should be fat on the top of the prime rib
- Caraway seeds
- 3-4 onions, quartered
- Flour
Preparation:
- Preheat oven to 325F
- Sprinkle flour all over the roast, giving it an even, but light coating
- Place roast fat-side up (rib-side down) in a roasting pan on a grill so that the roast is not resting directly on the bottom
- Sprinkle with caraway seeds
- Place onions in roasting pan
- Plan to roast for about 20-25 minutes / pound (or until the internal temperature reaches 145F for medium rare, 160F for medium)
- When done, remove from oven, cover with tinfoil and let sit for at least 15 minutes (use this time to cook the Yorkshire Pudding)
