Making Rotkraut

Office events bloom at this time of year; it marks the coming of the season. Tomorrow our group is having a potluck lunch. Many of us are bringing in a prepared dish and my contribution will be rotkraut (red cabbage). 

In our household we often served this with duck. Traditionally it may have been goose.  It goes well with duck as the vegetable is a little bit sweet.
