Curry (chicken, lamb or pork)
This is a recipe from my Grandfather for lamb curry.
15-30 ml (1-2) tablespoons butter
2 medium-sized onions (chopped)
2-3 apples, cored & peeled
1/2 can tomato paste (small tin)
1 oxo cube (beef or chicken)
5 ml (1 tsp) sugar
15 ml (1 tbsp) curry (or to taste)
left-over lamb (i.e. already cooked), cut into cubes; as much as you have/want
Saute onions, when done add apples, crumbled oxo cube, banana, tomato paste and 1 cup water (less if gravy)
simmer until smooth (about 1/2 hour)
Squeeze lemon & add peel, add sugar and curry
Simmer for 10 mins and remove lemon peel
Add meat and simmer for 20-30 mins.
I sometimes use apple sauce instead of apples
