Curry (chicken, lamb or pork)

This is a recipe from my Grandfather for lamb curry.

Ingredients:

  • 15-30 ml (1-2) tablespoons butter

  • 2 medium-sized onions (chopped)

  • 2-3 apples, cored & peeled

  • 1/2 can tomato paste (small tin)

  • 1 oxo cube (beef or chicken)

  • 1 Banana

  • 1/4 lemon

  • 5 ml (1 tsp) sugar

  • 15 ml (1 tbsp) curry (or to taste)

  • left-over lamb (i.e. already cooked), cut into cubes; as much as you have/want

Steps:

  1. Saute onions, when done add apples, crumbled oxo cube, banana, tomato paste and 1 cup water (less if gravy)

  2. simmer until smooth (about 1/2 hour)

  3. Squeeze lemon & add peel, add sugar and curry

  4. Simmer for 10 mins and remove lemon peel

  5. Add meat and simmer for 20-30 mins.

Cheats:

  • I sometimes use apple sauce instead of apples
