2 strips / pieces Pork Ribs (back or side)
Cover ribs in rub
Cook in smoker for 3 hours at 90 C (200 F)
Cover ribs in tin foil, and cook again in smoker at 90 C for 2 hours
Remove tin foil from ribs, add BBQ Sauce, and cook in smoker for 1 hour
Note: I cook the ribs in my Kamado smoker / BBQ using lump-charcoal and the heat defector plates to avoid direct heat on the ribs.
