Ingredients:
- 2-1/2 cups all purpose flour
- 1 Tbls sugar
- 2 tsp active dry yeast
- 1/4 tsp salt
- 1-1/2 cup milk, warmed to 80-90F
- 2 eggs
- 1 Tbsp melted butter
- 2 large apples (gala or fugi)
Steps:
- In a large bowl, mix together flour, sugar, yeast and salt.
- Add warmed milk, egg and melted butter and mix
- Cover batter and place in a warm, draft-free place to rise for 1 to 1-1/5 hours (I use the oven)
- Near the end of the rising time, prepare apples by cutting them into slices
- Using a spoon, drop batter into oiled pan and form 3” cakes. Place apple slices on the top of each cake and cook until the batter bubbles/about 2-3 minutes and then turn the cakes over
- Keep cooked pancakes in 200F oven until ready to serve
- Srpinkle with icing sugar before serving
