Batter
Ingredients:
- 225 g (1/2lb) flour
- some vanilla flavour
- 5 ml (1 tsp) Baking Powder
- 2-3 egg yolks
- 5 ml (1 tsp) salt
- a little sugar
- 500 ml (2 cups) milk
- 2-3 egg whites
- 115 g (4oz) butter for frying
Fruit:
- 1 kg (2 1/4 lbs) fruit (e.g., apples)
- Sugar to sprinkle
Steps:
- Sieve together flour and Baking Powder
- Beat together the egg yolks, salt, sugar, and a little of the milk
- Make a well in the middle of the flour and pour in the egg mixture
- Starting from the middle, combine the egg mixture with the flour.
- Gradually add the remaining milk and stir until smooth and free of lumps
- Whisk the egg whites until stiff and fold gently into the batter
- Melt butter into frying pan and pour in a thin layer of batter. As the pan cakes begin to set, put in some peeled, sliced apples. Fry both sides until golden brown. Sprinkle with sugar and serve.
