According to Wikipedia, it was first cultivated in Germany as a subsistence measure during World War I and is now grown commercially around the world for food.

It reminds me of stories told to me by my grandmother, who after that war, survived in part on food rations shared with her family by occupying French soldiers. As one of the many outgrowths of the COVID occupation is our sojourn into home farming, and specifically here, the cultivation of this fungus. Not only are they good to eat, but they are interesting to look at and photograph.
