An old friend

I was reading an entry on Paul Moore’s site: the Perfect Skillet. It caused me to reflect on my favourite frying pan. It is pure and 100% cast iron, with no enamel glaze or coverings what so ever. The iron is thick, black and heavy.

I have owned this frying pan since 1974. It has travelled with me since then through Racine Quebec, Montreal, Waterloo Ontario and now Thornhill. It has prepared many meals: from bacon & eggs to Wienerschnitzel. It was part of the collateral for my first car. The glaze on it’s surface is the culmination of 35 years service. A surface that has never seen the sight of detergent; only hot water, scrubbing and the occasional salt bath.

I’m sure this pan will survive me and I will leave it to my son, as he too enjoys cooking and will appreciate the rugged simplicity and utility of the pan.
